Special holiday breakfasts were always a big part of my childhood, and I love bringing that tradition to my own family. Although we always enjoy Easter breakfast between church services, I know many people enjoy a large brunch after an early church service. Here are some ideas to share at your Easter breakfast buffet:
-Egg casserole full of your favorite fillings (cooked breakfast meats, small diced veggies, leftover stale bread)
-French Toast or Pancake Casserole (hint: make up a big batch of Cassie's Buttermilk Pancakes several days in advance to simplify this dish)
-Muffin selection (my favorite springtime muffin is my Lemon Poppyseed Muffin Mix!)
-Pancake Taco Bar (prep ahead lots of foldable buttermilk pancakes and have fillings available such as ground sausage, cheese, warm fruit filling, whipped cream, syrup, scrambled eggs, finely chopped bacon, and so much more!)
-Quiche filled with all your favorites
-Yogurt parfait bar with plenty of granola and fresh fruit
-Asparagus topped with a cream sauce or served cold in a chopped salad with a vinaigrette
-Roasted potatoes (coat with high quality olive oil and Cassie's Creole seasoning)
Remember - don't stress about the decorations and a perfectly set table. Friends and family gathered around the table are the most important part while you celebrate the Resurrection.
